What truly stood out to us wasnโt just the flavour combinations but also the unique textures. Take the kale taco topped with Japanese puffed rice, apple, and curry gel โ it was a burst of flavour we wonโt forget! We also noticed a delicious hint of macadamia and curry gel throughout the meal, which hit the spot every time.
Prior to being presented with our dessert, we were presented a deconstruction of all of the ingredients. We found this to be an inventive touch that set the stage for Miaโs signature ‘cereal bowl’. The sweetness of corn ice cream balanced beautifully with Milo cream and a crunchy homemade cereal mix โ a fun finale! Itโs Mia doing what they do best: unique combos and show-stopping presentations all the way through.
The Story Behind The Dishes
The meal kicked off with Miaโs signature sourdough brioche โ fluffy, delicious, and paired the most delectable shallot butter topped with onion ash, a unique concept that was executed beautifully. But what makes this dish extra special is the story behind it: Mia continues to use the very same starter Chef Michelle was cultivating all the way back from the chefsโ first encounter in Singapore, marking the beginning of their relationship.ย Itโs a sweet touch that makes this dish even more endearing. We also couldnโt get enough of their chilli oil! Our server mentioned itโs such a hit that customers keep asking to buy it. Turns out, itโs a family recipe passed down from the chefโs grandmother โ a true original. Learning these backstories really made us appreciate the sentiment that ‘food is a labour of love’.
