A Menu That Maps The World

Recently hosting icons and guest shifts for the Asia’s 50 Best Bars awards, Wing Lei Bar has become a central hub for the global cocktail scene. This new menu, titled UNITY, is the direct result. Crafted under the guidance of Head Mixologist Mark Lloyd, it’s a delicious collection born from a year of travel, collaboration, and late-night conversations with leading bartenders from Mexico to Milan.

This new offering wants to go a step further than mere tipples, aiming to bottle the spirit of international encounters. Each cocktail is a story: a memory of a night in a different bar, a friendship forged across borders, or a flavour discovered in a new city. Together, they invite you to travel the world one sip at a time all without leaving your seat in the heart of Wynn Palace.

Four Styles, Infinite Stories In A Glass

The drinks you’ll be able to try are as creative as they are delicious. There’s ‘Tommy’s Holiday,’ a travelling Margarita that changes its identity monthly as a tribute to a guest shift with a legendary bartender. ‘Not Quite a Penicillin’ cleverly reimagines a modern classic with Cantonese notes like oyster sauce and sand ginger. And for something truly adventurous, ‘Dak-Galbi’ channels the fiery, spirited energy of Seoul with chili mezcal, banana-infused makgeolli, and a hint of drunken chicken marinade.

The menu itself is designed as an exploration of four classic cocktail styles – Classics, Sours, Alternatini, and Stirred – showcasing cross-cultural inspiration. From the umami-rich, parmesan-infused ‘Basil Smash’ inspired by a summer in Milan, to the tropical ‘Miami Vice Negroni’ that stretches the Italian staple into a rum-based vacation, every sip reflects a global encounter.

Why Cocktails Speak A Universal Language

For Mark Lloyd, UNITY is a declaration on the evolving role of bars today. ‘Every one of these cocktails is born of connection,’ he says. ‘They remind us that cocktail culture is a global dialogue.’

With UNITY, Wing Lei Bar strengthens its reputation not just as a destination for luxury, but as a key player shaping the future of mixology. Guests are invited to explore this world of flavour at Wynn Palace, where the art of libations comes together. The UNITY menu is available from 18 September.
